Fresh Salsa

Hello! It’s been a while since I’ve taken the time to share some new recipes, as we have been very busy here lately (details to come). Over Memorial Day weekend, I knew I would have a whole extra day to dedicate to cooking and sharing recipes, so I hope you enjoy! 

This fresh salsa is exactly that – super fresh! You can serve it immediately, but what I’ve found is that if you make it 12-24 hours ahead of time, the juices really blend together and it has a more impactful and bold flavor.

Ingredients:

  • 12oz Grape Tomatoes
  • 1 Red Bell Pepper
  • 2 small Red Onions
  • 1 handful Cilantro
  • Juice of 1 Lime
  • Salt, to taste

Directions:

Finely chop the grape tomatoes and cilantro and set aside. Dice the onions and bell pepper and combine all ingredients in a large bowl, adding salt to taste. Serve with corn tortilla chips, or add to any dish and enjoy!
