Shaved Brussels Sprout Slaw

This is a great side dish, or you can load up your bowl for a super healthy main dish!


  • 2 lb brussels sprouts
  • 1 cup cherry tomatoes
  • 1/2 red onion
  • 12 oz frozen corn, thawed
  • 8 oz black olives
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tbsp dijon mustard
  • 1 tbsp honey
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper


In a food processor fitted with a shredding disk, shred brussels sprouts and put in a large mixing bowl and set aside. In a separate mixing bowl, whisk together olive oil, vinegar, mustard, honey, and seasonings. Pour over the brussels sprouts and let marinate in the refrigerator for at least 30 minutes.

While marinating, prepare vegetables: Halve the cherry tomatoes, dice the olives, slice the red onion, and grill or blacken the corn.

Toss all ingredients together and serve. Optional: top with shredded parmesan cheese
