Rosemary Roasted Potatoes

A super simple side dish, I pair it with everything!

Ingredients

  • 2 lbs baby potatoes, washed and halved
  • 2 tbsp fresh rosemary, rough chopped
  • 1/4 cup olive oil
  • salt and pepper

Directions

Preheat oven to 425º and line a large sheet pan with parchment paper (for quick cleanup). In a large mixing bowl, toss together all ingredients. Pour onto the baking sheet and roast in the oven for 45 minutes, stirring halfway. Serve hot.
