Spicy Thai Broccoli and Bell Peppers with Sweet Potatoes and Rice

Hello again! As I make my way through the month of January, I have been reflecting, re-committing, and I’ve been cold! This spicy Thai-inspired dish is a sure way to stay warm and cozy – It’s packed with veggies and is incredibly filling and scrumptious. It’s a one-pot dish, so cleanup is a breeze, and makes for really great leftovers!

For this recipe, a large dutch oven is ideal, but if you don’t have one handy, any type of large pot you’d use to make soup will work (the key word is large – this recipe makes a lot!)
